Apparently this is not a standard config, but the nginx install I'm working with uses the following folders:
- /opt/nginx/ - configuration and logging folders
- /opt/nginx/conf/nginx.conf - master config file
- /etc/php5/fpm/ - PHP-FPM configuration
- /etc/php5/fpm/pool.d/www.conf - config file to actually edit
