The magic command for getting this to scan longer documents:
scanimage -d "fujitsu:fi-6130Zdj:438796" --format=jpeg --page-height 879 > <filename>.jpg
However, it still seems to have a length-limit.
Note that the above command defaults to monochrome; to get color, add --mode color before the ">".
