Mastodon Glitch Edition, aka GlitchSoc, is a fork of Mastodon which adds some additional features.
One of these is the ability to enable posting in HTML or Markdown, which does not seem to be documented anywhere. (It has to be enabled on a per-client basis via [Getting Started] → [App Settings] → [Compose box (tab)] -> check the "show content-type choice" checkbox.)
